Because we use eggshells as a form to cover with polymer clay we have some favorite recipes that call for eggs.  Here's a link to a page showing how to blow out eggs that can be used, just add them a small portion at a time when mixing in recipes

We have a great recipe for chocolate cookies that uses a lot of eggs. and they are delicious family favorites too. These are very popular cookies, and we include them in our Holiday baking every year. The dough can be kept covered in the refrigerator for several days and baked in batches when a plate of fresh cookies is needed!

Also here is a basic quiche recipe that you can use as a starting point--then add whatever you like, more cheese, bacon, green onions and garlic or whatever you like.

Chocolate Snowball Cookies    

makes around 12 doz.  bake at 375° F                 

  • 8 oz. squares unsweetened chocolate                       

  • 1 Cups butter

  • 4 Cups sugar

  • 10 eggs

  • 4 teaspoons vanilla extract

  • 5 Cups flour

  • 4 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1-2 Cups powdered sugar

Combine chocolate and margarine in double boiler; melt and remove from heat.

Add sugar, mixing well. 

Add eggs one at a time, beating well. If using blown eggs, add a small portion at a time.

Blend in vanilla.

Stir in dry ingredients. Mix well and cover bowl.

Chill at least 2-3 hours, or overnight in a covered bowl.

Shape by the teaspoon-full  into 1" balls, roll in powdered sugar. 

Place 2" apart on greased cookie sheets, and bake for 8-10 minutes.

These set up more as they cool--do not over bake. They should still look a little soft when they come out.


Basic Quiche

Yield 1 - 9 inch quiche. six servings    start at 425° F

  • 4 eggs

  • 2 cups half-and-half cream or milk

  • 1/8 teaspoon salt

  • 1/4 teaspoon ground pepper

  • 4 ounces cheese, shredded

  • 1 cup large curd cottage cheese, 

  • 1 (9 inch) unbaked pie shell

Preheat oven to 425 degrees F (220 degrees C).

In a large bowl, whisk together eggs and half-and-half. Season with salt and pepper. 

Mix the shredded cheese and cottage cheese together and place in the pie shell. Pour egg mixture over cheese. You can also add all sorts of things like sliced mushrooms, onions, cooked and crumbled bacon--whatever you like!

Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C), and bake for 25 minutes, or until crust is golden and filling is set. Allow to set 5 to 10 minutes before serving.
